We are devoted to the use of natural leaven or sourdough starter in our bread. Here are some of the benefits of this traditional microbial transformation:
While modern bread is a dead product of industrial chemistry produced in 2 hours, sourdough is a 24h hour microbial transformation. This ‘pre-digestion’ process changes how your blood sugar and gut react to wheat.
A sourdough starter is a live culture where wild yeasts and lactic acid bacteria live in harmony and support each other, unlike commercial yeast, which is a monoculture, this is a diverse ecosystem.
All grains contain phytic acid, an ‘anti nutrient’ designed to protect the seed. Sourdough fermentation produces phytase – an enzyme that literally dismantles phytic acid. This makes the minerals (like iron and zinc) in the flour bioavailable.
Sourdough bread produces a lower blood sugar spike compared to yeasted bread, making it easier on your metabolism.
The long fermentation process breaks down the complex gluten protein chains, that’s why many people with gluten sensitivity can eat sourdough without bloating or discomfort.
During the long fermentation process the lactic acid bacteria create specialized fibres that act as prebiotics. These fibres survive the high heat of baking and become a fuel for your gut microbiome.
Unlike standard breads made with commercial yeast, authentic sourdough has a uniquely complex flavor profile, best known for its signature "tang" or mild sourness, balanced by deep, earthy, and slightly nutty undertones.
